WATERMELON SLUSH

Watermelon is one of my favorite fruits. Reminds me of hot summers in Florida growing up. Me, my sisters, and cousins would be running around the backyard after grabbing slices from the picnic table spitting out seeds (where are the seeds???) and tossing rinds on the ground. Nine dirty, sweaty kids being yelled at to pick up after ourselves as we swatted flies and mosquitoes away. I’d eat my slices down to the rind every time.

Watermelon isn’t always on the list of keto approved fruit. You may want to check it out and see how you feel. For me, the carb count is “low” and in moderation, anything goes for cheat meals. If I can break keto for a candy bar or fries occasionally, I can do it for fruit.

I made a watermelon feta mint salad for a small gathering for the Fourth and had a lot of melon leftover. I chopped everything in froze them in batches spread out on a tray and put everything in a freezer bag when the last batch was done. I eat the frozen watermelon like it’s Popsicle chunks and was planning to recreate a cocktail I saw on The Kitchen. I tried to Google it but it didn’t come up. But the Watermelon Slush did. And now I share it with you.

This is great because it can be made without alcohol and be just as good. If you don’t have a full bottle of watermelon vodka you could probably use regular vodka. Or just grab some watermelon nips at the liquor store checkout. I added fresh lemon juice because the melon vodka made it a little sweet. The mint is also optional.

INGREDIENTS

  • 2 cups of frozen watermelon chunks
  • 4 oz watermelon vodka
  • fresh lime or lemon juice to taste (optional)
  • 3-4 fresh mint leaves (optional)

DIRECTIONS

  1. Put all ingredients in a blender and blend until smooth.
  2. Garnish with mint and serve.
